Reviewer W. Peter Hoyne informs readers about the vineyard selection and winemaking details for Ayala’s prestige wine, Le Blanc de Blancs 2013. He continues to share his tasting notes of this 100% Chardonnay expression, beginning to explain the nose featuring “delicate white flowers and brioche.” Furthermore, he says, “this finely-tuned Champagne reveals a satiny core of vanilla bean and pastry dough layered with candied citron and ginger. It has fresh acidity and finesse.”
Like the Blanc de Blancs, Hoyne’s overview of Brut Majeur begins with background on the blend and vineyards. In addition to noting subtle yeasty notes, he describes Brut Majeur as “elegant and focused yielding tropical elements of lemon meringue and yellow plums.
